Cooking and reading are two of my favorite things. Lately, I’ve been all about making granola. My peanut butter granola is DELICIOUS and super easy–plus it needs over an hour of hands-off time in the oven, so plenty of time to read. (My current read is The Proposal by Jasmine Guillory. I absolutely loved The Wedding Date and could not wait to get my grubby little hands on her new book.)
Here’s what you need for the granola:
2 T. coconut oil
½ cup of maple syrup
½ cup of natural peanut butter
1 t. vanilla
3 ½ cups of old fashioned oats
1 cup of chopped walnuts
1 cup of chopped pecans (you can change up the nuts, depending on your taste, but this combo is my favorite)
½ t. Kosher salt
In a small saucepan, cook the oil, syrup, and peanut butter on low heat, stirring until everything is melted and smooth. Off heat, stir in the vanilla.
In a large bowl, mix together the oats, nuts, and salt. Pour the peanut butter mixture over the oats and stir until combined.
Bake at 250 degrees Fahrenheit for 75 minutes. Let cool, break into pieces, and keep in an airtight container for up to two weeks–but it won’t last that long.
