Between football practice, homework, and the fact that my boarding school feeds me most of my meals, I don’t get a ton of time to fool around in the kitchen. But that doesn’t mean I can’t cook. My recipes are simple, but amazing. In fact, my skills are so good that in the summer when I live with my aunt gives me free range to make all of our meals.
Today, just for you, I’m giving out my super secret chicken recipe. It’s one of the few dishes that fills me up, which is saying a lot since since my roommate claims my stomach is a bottomless pit.
Let’s get to it? Alright. I present my Bacon wrapped Chicken.
My Dad taught me how to cook way better than those fancy cooking classes Brockmore required us to take as a Freshman. Seriously. All you need to make any meal amazing is a pound of bacon.
So run to the store and grab a pound of thick cut bacon, two pounds of raw chicken tenders (or if you are really starving chicken thighs), and pick up Weber Kick’N Chicken seasoning (a kitchen and grill staple in my opinion).
Preheat the oven to 400 when you get home and grease the baking pan so none of the delicious bits stick. You won’t want to miss a taste of this dish!
Wrap a slice of bacon around each chicken tender and put it in the dish. Season it generously with Kick’N Chicken. If you can’t find Kick’N Chicken seasoning, I’ve made it work with a combo of S&P, Crushed Red Peppers, Garlic powder, and a dash of cumin. Don’t ask me for measurements on those. I just toss them together until they smell right. Probably best just to pick up the Kick’N Chicken because there’s nothing like it.
Bake the chicken for 20-25 minutes. Once it looks done (about 165 degrees with a meat thermometer), set the oven to broil to get that chicken and bacon a little crisp. I usually broil for about 4-6 minutes.
Then BAM, you’ve got a plate full of the most delicious chicken that’ll fuel you through the day. Enjoy!
