In Not Today, Cupid, the heroine, Scarlett Evans, has an awkward meet-hate with CEO Nick Hart and after a rough day at the office, she races home to make a bevvy and vent to her roommate (as you do.) Scarlett’s drink of choice is a Prickly Pear Margarita (the only mixed drink I know how to make) and if you’ve never had one before, I highly recommend giving it a try! I first sampled this drink at my little sister’s wedding and when I returned home, I couldn’t find a single restaurant serving it, so my brother-in-law sent me a bottle of prickly pear syrup so I could make my own! Prickly Pear Margaritas are the perfect drink for spring, or really, any time of year, and the gorgeous pink hue gives total Not Today, Cupid vibes.
So if you enjoy fruity cocktails and grumpy/sunshine romance with snappy banter, sassy office pets, and all the spice, make yourself a prickly pear margarita and one-click Not Today, Cupid!
Ingredients
Salt (Any variety will work, but Hibiscus salt is *chef’s kiss*)
1½ ounces tequila
1 ounce Cointreau or triple sec
1 ounce freshly squeezed lime juice
½ ounce prickly pear syrup
1 lime slice or wedge for garnish
Ice
Instructions
- Wet the rim of your margarita glass by running a lime wedge around the edge. Press the rim of the glass into a plate of salt (any kind will do.) Fill the glass half-full with ice.
- Fill cocktail shaker with ice, then add tequila, Cointreau (or triple sec), lime juice, and prickly pear syrup. Shake vigorously until well-mixed and then strain into the prepared glass.
- Garnish the rim with a slice of lime and enjoy!

Well, my fellow corporate drones, it’s another less-than-exciting investor meeting with the executives (Loud Talker, Human Buzzword, Master Delegator). And at the front, CEO Nick Hart, the world’s coldest—and ok, unbelievably sexy—tech badass. The man hasn’t smiled in the history of ever, he runs a tight ship filled with miserable employees, and gosh, he just really does not love feedback. Especially from me.
Development updates, acquisition delays, and…holy hell, why does he keep looking at me? I don’t work for him. I work for his brother. Which is good, because otherwise I’d spend every meeting secretly wondering what actually lies beneath that cool, aloof demeanor. Like, is he an uptight geek in the boardroom…and a sexy-assed freak in the bedroom?
He’d better not find out I’m the one stuffing the company suggestion box. What’s so wrong with a Valentine’s Day Social, anyway? But the fact that my notes are less professional and more entertainment is one seriously dangerous game. Because if he ever found out what I really thought of him, there’d be all kinds of sweet, delicious hell to pay…
