Hello and happy Fall! I’m so happy to be here sharing a super easy and delicious recipe with you in honor of my new book, The Matchmaker and The Cowboy! This recipe is special because I created it to remember writing this book. My hero, Hunter, is gifted a Banoffee pie in the story, and while I do like pie, I love ice cream, so I designed a twist on the popular British dessert. I hope you love this 4-ingredient recipe as much as I do! 😊
Here’s all you need to create my Banoffee Sundae Cups…
1 Cup Biscoff cookies, crushed (approximately 8 cookies)
1 banana
Dulce de leche ice cream
Caramel syrup
I put these in small glasses because I think it’s fun, but you could use any bowl/mug/glass you want!
Directions (makes 2 servings):
Pour the Biscoff cookies (found in your local grocery store) evenly into the bottom of two glasses. Slice a banana and place the slices on top of the crushed Biscoff. Scoop dulce de leche ice cream on top of bananas. (It’s up to you how many scoops!) Drizzle the caramel syrup over the ice cream. Enjoy!
