Entangled in Romance: Gingerbread Cookies with Robin Bielman

Hello Entangled in Romance readers! Happy December!

If you’re like me, one of your favorite things about this time of year (besides reading) is the yummy baked goods you get to enjoy with family and friends. We’re big cookie lovers in my family and so today I thought I’d share the recipe for my much-loved ginger cookies.

Ingredients:

4 ½ cups flour

4 teaspoons baking soda

1 tablespoon ground ginger

2 teaspoons ground cinnamon

1 teaspoon ground cloves

1 teaspoon salt

1 ½ cups softened unsalted butter

1 cup brown sugar

1 cup granulated sugar

2 eggs

½ cup unsulphured molasses

Directions:

Whisk together the flour, baking soda, ginger, cinnamon, cloves and salt. Set aside.
In a separate mixing bowl, cream together the softened butter and sugars on medium-high speed until the mixture is light and fluffy, scraping down the sides of the bowl as needed. Mix in the eggs one at a time then the molasses, and beat until combined. Gradually add the flour mixture and beat until evenly incorporated.
Transfer the dough to an airtight container and refrigerate until completely chilled, about 2 hours.
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Fill a small bowl with sugar, set aside. Roll the dough into small 1-inch balls then roll each ball in the sugar until completely coated. Place dough balls on the prepared baking sheet.
Bake for 10-12 minutes, until the cookies begin to slightly crack on top. Remove from oven and let cool.

Served warm, they are chewy and delicious!! And they disappear almost as fast as I can make them. ❤️ ❤️ (Makes approximately 5 dozen cookies.)
