Chicken Wings with Cathleen Ross
Who tried it: Cathleen Ross, author of Snatched
Why she likes it:
I thought I’d share a recipe for Nonno’s Chicken Wings because they are absolutely delicious and nice to eat cold as well.
Ingredients:
20 chicken drumettes
2 onions chopped fine
1 tablespoon of olive oil
1 tablespoon of butter
1 bunch of flat-leafed parsley
a piece of lard (optional)
A teaspoon of allspice
Directions:
Sprinkle wings with allspice and salt
Fry onions until clear, add chopped parsley, add wings and brown, cover with white wine and turn around as they cook. Add a dash of tomato paste.
Cook for one hour steadily turning so they don’t burn. When most of the wine is cooked off and they are brown, they’re ready to eat.
With all that extra time not spent in the kitchen, what’s Cathleen currently reading?
All the tears in China by Sulari Gentill. I really loved this book because Sulari captures the old world Shanghai before the approaching war. Wealthy, black sheep of the family, Rowland Sinclair has to decide whether to sell his wool shipment to the Nazis, a movement he personally finds disturbing and hideous. It’s no context and he chooses to do another deal and make less money.
A mystery occurs at the beginning, which Rowland and his team decide to solve when a body is found in his hotel bedroom. It’s a deadly serious business and Rowland doesn’t know if he’s going to get out of it alive.
