As a romance writer, I can’t resist a good summer nude, or…um…nood. : )
This recipe is a summertime family favorite that my kids have coined “Summer Noods.” It’s easy, it’s fresh, and it’s great on picnics, camping trips, or a trip up to Lake Superior, the place where my latest novel, WILD CHILD, begins. There may even be a couple summer nudes up there, too.
SUMMER NOODS
1 box penne or rotini pasta, cooked al dente
1 small jar real mayonnaise (not Miracle Whip)
1 bag seedless red grapes, whole
1 lb. pre-cooked turkey breast, cubed
1 C. cashews
Cook pasta, rinse in cold water and allow to cool in a large container. Rinse grapes and add to pasta (leaving them whole). Cut turkey into 1/2-inch cubes and add to pasta. Add a couple large spoonfuls of mayo and mix. The pasta will absorb a lot of mayo, so if not serving right away, you may need to add more later. Sprinkle with cashews.
So simple. So delicious.
