Banana Bread with Robin Bielman
Who tried it: Robin Bielman, author of Talk British to Me
Why she likes it: I could pretty much live on bread, and this recipe is a favorite, handed down to me from my mom. My family loves this baked goodie so much that a loaf lasts all of one day in my house. (I do have three hungry guys who can easily pack it in.) The secret to making this recipe better than all the other banana bread recipes out there is frozen bananas. ?
Ingredients:
½ cup soft butter
1 cup sugar
2 eggs
4 mashed ripe bananas (or in my case, frozen bananas that I’ve defrosted in the microwave – all those bananas that go bad sitting on the kitchen counter are saved in the freezer for this recipe!)
1 tsp. milk
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
¼ tsp. salt
Directions:
Cream butter and sugar in a large bowl until light and fluffy. Beat in eggs.
Mix mashed bananas, milk and vanilla, set aside.
Mix flour, salt and baking soda, set aside.
Alternate blending in each mixture with the butter and sugar.
Turn into a greased 9x5x3 inch loaf pan. Bake at 350 degrees for approximately 1 hour. Cool 10 minutes in pan. Enjoy!
