Sweet Potato Fritters with Bacon and Eggs from Amanda Ashby

Why she likes it:
Here’s a funny thing. I hated cooking until I discovered I could watch Netflix on my laptop and cook at the same time. Seriously, this was a life-changing discovery, because I’m a girl who loves watching television (though weirdly enough – no cooking shows. I’m more Buffy and Game of Thrones). Anyway, one of my favorite recipes is Sweet Potato Fritters with Bacon and Eggs. Not only is it super easy to make but it’s gluten free, dairy free and sugar free. Plus, delicious!
Ingredients:
- 1 cup of grated sweet potato
- 2 eggs
- 1 rasher of bacon
- 1 teaspoon of coconut oil
- Latest episode of RuPaul’s Drag Race (this is optional, but it does tend to make the meal taste better. Just sayin’)
Directions:
Heat up coconut oil in a frying pan and put in the bacon, while it’s cooking crack one egg into the grated sweet potato and mix it up. Check the bacon and then watch RuPaul spread her divine wisdom and smutty jokes.
When the bacon’s cooked, check there’s enough oil and then put in the fritter mixture. Cook for about 3-4 minutes each side and turn your attention back to all those gorgeous divas working their stuff. Once the fritter is cooked on both sides, remove and then fry the egg. Oh and the most important thing – no sharing. This is too yummy and must be eaten in full!
Now that the food and television are out of the way, let’s switch to what I’m reading!
With all that extra time not spent in the kitchen, what’s Amanda currently reading?
The Song Rising by Samantha Shannon. This is the third book in the Bone Season and it’s kind of awesome! It’s set in an alternative London with an entire underworld of magical users who are being threatened from all sides. I like to think of it as the Harry Potter meets Oliver Twist with a bit of Godfather thrown in. I definitely recommend it!
