‘Tis the season for Cranberry Pomegranate Bellinis with Clare James!

Happy Holidays, everyone!

To help celebrate, I’d like to share a few of my favorite holiday cocktail recipes. In my family, we used to do a cookie exchange every year, but now everyone is always dieting so we’ve changed our focus a bit…(;

I served this first recipe on Thanksgiving this year. It was inspired by my sister’s obsession for pomegranates. It’s super easy, yet looks fancy and festive.

Cranberry Pomegranate Bellinis:

1 Bottle of your favorite sparkling wine (I love prosecco)
1 Bottle of store-bought cranberry/pomegranate juice
Fresh cranberries and pomegranate seeds for garnish

I make these fresh for each guest as they walk in, but then have a station set up so everyone can make their own throughout the evening. All you do is take a champagne flute and fill it with the juice—about ¼ of the glass. Top with sparkling wine and garnish with a few cranberries and pomegranate seeds. You could also line your glasses with a flavored sugar if you really want to be fancy!

This next one is definitely not for dieters, but they will be tempted. Plus, it has a super cute name—Nuts and Berries. For this one, you’ll need:

1 ounce Frangelico
1 ounce Chambord
Cream or milk to fill

Then, simply pour the liqueurs into an old-fashioned glass filled with ice. Stir well.

Top with milk or cream and stir again.

We served this on Christmas Eve one year, but mixed it all in a blender with ice, poured into cute little glasses, and stored in the freezer. That way, it was easier to serve to a lot of people and it was more like an ice cream drink. So delicious!!
