I’m Dawn Chartier, and I’m the author of Bewitching the Enemy (Book 1 in the Vieux Carre’ Witch Sister series). Even though the book was released around Halloween the novel is actually set around the Christmas holiday. One of my favorite scenes in the novel is when my heroine is giving the hero his present. If you’ve read the book you know what I’m talking about. LOL
The holidays bring back so many wonderful traditions. And the one tradition I’m craving this Christmas is a treat my mother would make every year. Orange Coconut Balls. They may not sound good, but once you tried them you’ll see why I crave them every holiday. So so yummy! The recipe may not be exact, and my mom is no longer here to ask, but I’m sure this is close enough.
Christmas Orange Coconut Balls
1 Box Vanilla Wafer Cookies (Crushed)
1 Box Confectioners Sugar (use a little less if you don’t want it that sweet)
1 Stick of Butter
1 Small Can of Frozen Orange Juice (concentrated and thawed)
1 Cup of Coconut (I put about 1/3 cup of coconut into the mix and use the rest to coat the outside)
(Some people use pecans to coat the balls instead of coconut)
Blend everything (You can blend in some of the coconut as stated above) and then role the small balls (about the same size of Bourbon Balls) over the coconut. You can refrigerate overnight for a better flavor. In my family we can’t wait that long.)
